Introduce protocol profiles and legacy custom payload codecs for 1.7.10/1.8 behavior. Add Forge handshake tracking, gating, reset, plugin channel replay, legacy switch cleanup, diagnostics, and local 1.7.10 deployment scripts. Document the protocol version matrix and current support limits.
